Macadamia Nut Brittle

Ingredients 

  • 1 stick butter 1/2 cup sugar 
  • 1 cup coarsely chopped macadamia nuts 
  • 1 Tablespoon light corn syrup 
  • 3/4 cup chocolate chips

Directions

Line a 9 inch cake round with foil and grease with butter lightly. In skillet melt butter and sugar over low heat. Add nuts and corn syrup, raise heat and stir constantly until mixture begins to mass together and turn golden. Pour into prepared pan and let cool for 5-10 minutes. Scatter chips on top and wait 5 minutes, when softened spread over surface of brittle. Remove brittle and Liner from pan and cool completely. Peel off foil and SMASH–Yum! Or you can cut it with a knife, which I find leaves bigger pieces.

One thing I have found easy for cleaning–after pouring brittle in pan take a wad of paper towels and wipe out the skillet, easier than soaking a pan of hardened sugar.

I guarantee this will become a favorite whenever served.
