Tiramisu

Not sure where we found this recipe. But, it’s darn good. 

Ingredients 

  • 4 eggs
  • 1/2 Cup Tia Maria or Brandy
  • 1 lb. Mascarpone cheese
  • 1/2 cup granulated sugar
  • 1 package crunchy lady fingers (or stale soft ones)
  • 1/2 cup strong espresso (decaf is OK)
  • 2 oz semi sweet chocolate (or use cocoa powder)

Directions

Separate egg whites and yolks into 2 large bowls.

Add liqueur to egg yolks and stir until blended. Add Mascarpone cheese to the yolk/liqueur mixture. Stir until blended.

Beat egg whites until soft peaks form. Continue to beat, adding sugar a little a at time until stiff peaks are formed.

Add half of the egg whites to the cheese/liqueur/egg yolk mixture and blend well. Then gently fold in the rest of the whites. Set aside.

Place one layer of lady fingers in a shallow dish ( 10 inch round or 9×12 inch ). Brush lady fingers with espresso. Add half the cheese mixture and smooth the top. Grate 1/2 the chocolate over the top or sprinkle with cocoa power. Repeat this procedure. 

Refrigerate, covered for several hours or overnight.
