This is a recipe from Simply Recipes, but two techniques I learned on TikTok make it super creamy and delicious: boiling the chickpeas with baking soda and using frozen aquafaba instead of water. I usually make 1/2 recipe and it works well.

Ingredients 

  • 1/2 cup of tahini (roasted, not raw)
  • 1/4 cup extra virgin olive oil (plus more for garnishing)
  • 2 garlic cloves, mashed and roughly chopped or several cloves of roasted garlic
  • 2 15-oz cans of chickpeas (garbanzo beans)
  • a pinch of baking soda
  • 1/4 cup freshly squeezed lemon juice
  • 1/2 cup of frozen aquafaba or water
  • 1/2 teaspoon of salt
  • Garnishes: A sprinkling of paprika, a swirl of olive oil, toasted pine nuts, and/or chopped parsle

Directions

Open can of chickpeas and freeze some of the liquid, aka aquafaba, in an ice cube tray. I do several cubes at a time and keep in freezer. Dump the rest into a pan and add water to cover chickpeas. Add baking soda. Bring to a simmer and cook for 10 minutes. Some of the skins will float. Drain and cool to room temperature before continuing. The baking soda will soften the chickpeas and skins.

Process garlic, tahini, lemon juice, salt & olive oil in a food processor or high speed blender.

Then add the garbanzo beans, lemon juice, 1/2 cup of frozen aquafaba or water

Process until smooth. The longer you process in the food processor, the smoother the hummus will be. Add more salt or lemon juice to taste.

Serve: Spoon into serving dish, swirl a little olive oil over the top and sprinkle with garnishes—a little paprika, toasted pine nuts, or chopped fresh parsley.
