Mom made this frequently when I was growing up. I still have a soft spot for it. She served it on a piece of iceberg lettuce. It’s sweet enough to be a dessert.
Ingredients
- 1 9-oz. can crushed pineapple
- Water
- 2 beaten eggs
- 1/2 C. sugar
- dash salt
- 3 Tbsp. lemon juice
- 2 C. finely Diced unpealed apples
- 1/2 c. finely diced celery
- 1 C. whipped cream
- Maraschino Cherries

Directions
Drain pineapple, reserving juice. Add water to sirup to make 1/2 cup. Combine eggs, sugar, lemon juice and sirup mixture. Cook on medium heat, stirring constantly, until thick. Chill. Fold in pineapple, apples, celery and whipped cream. Put a cherry half in bottom of 3 or 5 oz. paper cup. Fill cup with fruit mixture. Freeze.
