Silver Palate Good Times Cookbook
Ingredients
- 5 T. unsalted butter
- 1/4 c. flour
- 2-1/2 c. milk
- 5 oz. Gorgonzola, crumbled
- 4 oz. Fontina, grated
- Pinch ground nutmeg
- S&P to taste
- 1 lb. ziti, cooked al dente and drained
- 4 oz. Mozzarella, cut into 1/4″ cubes
- 4 oz. fresh Parmesan, grated
- 1 tsp. paprika
- Bread crumbs (optional)
- Melted butter (optional)
Directions
Preheat oven to 350º. Butter a 2 qt. baking dish.
Melt butter in a med. saucepan over med. heat. Stir in flour and cook 1 minute. Gradually whisk in milk. Cook, stirring constantly until lightly thickened to consistency of cream. Whisk in the Gorgonzola and Fontina. Cook, whisking constantly, until cheeses are melted. Season w/ nutmeg, S&P to taste. Remove from heat.
Combine cheese sauce and cooked ziti. Stir in the Mozzarella and spoon into prepared baking dish. Sprinkle w/ Parmesan and then paprika. Cover with breadcrumbs and dot with butter. (optional-my addition)
Bake until bubbling and top is browned, 30-40 minutes. Serve immediately.

Love that book! Love macaroni and cheese in many forms but this sounds fabulous. (I cannot believe we never noticed this recipe.)

It’s really good. Make it in a loaf pan. Put it in the fridge until completely cold. Slice and fry in butter! Kicks it up a notch.

This is a great recipe. I saute the breadcrumbs with butter and mix in parmesan for topping. My local grocery store also sells the ends of cheese so I use that.
