Ropa Vieja

adaptation
of Taste of Cuba’s recipe
serves 2-4

I tried Sean’s recipe last time exactly as written. This time I played with it. Howard & I both loved the result.

Ingredients 

  • 14 – 16 oz flank steak (I used less meat than the original)
  • 1/2 onion, diced
  • 3 cloves of garlic chopped
  • 1/2 large red bell pepper, diced 
  • 1 small can smoked green chiles (hot or mild) (Scott’s addition)
  • 4 oz tomato puree
  • 1 c stock
  • 2 tsp cumin (I upped this)
  • 1/2 cup sofrito (I doubled this, since I have a lot in the freezer)
  • Olive oil
  • Salt and pepper

Directions

Brown the meat in olive oil in the cooking pot of the pressure cooker. Remove and set aside. Cook the onions, garlic and peppers in the same pot until translucent. Add the sofrito and cook a minute or two longer. Add the browned meat, along with any juices that may have come out, the cumin, salt and pepper, green chiles, water and tomato puree.  Put the lid on the pressure cooker and cook on high pressure for 20 minutes. Allow the pressure to come down naturally; do not quick-release. With tongs or forks, pull the strips of meat to shred them; they should come apart easily. Serve with Spanish rice.
